MEATBALL CASSEROLE

1/3 Cup Chopped green oninon
¼ cup seasoned bread crumbs
3 Tablespoons Grated parmesan cheese
1 LB Ground beef
1 loaf Italian bread, Cut into 1 inch slices
8 ounces cream cheese softened
½ cup mayonnaise
1 teaspoon Italian seasoning
¼ teaspoon pepper
2 cups shredded mozzarella cheese divided
1 jar spaghetti sauce
1 cup water
2 garlic cloves minced

Method: Preheat oven to 400

In a bowl combine oninons, bread crumbs & Parmesan cheese.
Add beef and mix well
Shape into 1 inch balls, place on a rack
In a shall baking pan, bake for 15 to 20 min or until no longer pink (or cook on a skillet on medium heat)
Reduce oven temp to 350
Meanwhile, arrange bread in a single layer in an ungreased 13x9x2 baking dish
(All of the bread might not be used)
Combine cream cheese, mayo, Italian seasoning and pepper, spread over the bread
Sprinkle with ½ cup mozzarella
Combine sauce & water & garlic, add meatballs
Pour over cheese mixture, sprinkle with remaining mozzarella
Bake, uncovered at 350 for 30 min or until heated through.

60 ml Asyn
125 ml Olie
20 ml Worcestersous
80 ml Tamatiesous
5 ml Paprika
5 ml Droë mosterd
5 ml Peri-peri poeier
5 ml rooipeper [kan minder maak]
5 ml Knoffel Poeier [of 1 huisie knoffel fyngemaak]
60 ml Sweet Chillie sous
Sout Peper

METODE
Meng al die sous bestanddele goed
Maak jou worsies met die spaghetti deur gedruk en kook dit in genoeg water totdat jou pasta gaar is
Dreineer en behou 1k van die pasta en wors water eenkant
Gooi die sous in n Wok of pan en maak warm en gooi jou gedreineerde worsie geraamtes** by maak goed warm en voeg nou jou 1k pasta aftreksel by en kook so 5min..stadig
Bedien dit net soos jy wil met slaai of net so [ek hou van n lekker lang sousie in dit)

TUNA MAC ‘N CHEESE

Bring a large pot of salted water to the boil.

Cook 500g Macaroni for 8 – 10 minutes, drain and drizzle over 1 Tbsp Olive oil.

Melt 1/4 cup (60ml) butter in a saucepan and whisk in 1/4 cup (60ml) flour.

Whisk in 2 1/4 cups (560ml) full-cream milk, season and bring to the boil, stirring continuously.

Allow sauce to cook for 3-4 minutes.

Remove from heat and stir in 2 cups (500ml) cheddar cheese, grated, and 2 cand (170g each) tuna, drained.  Combine pasta and sauce, and spoon into an ovenproof dish.  Scatter over 1/2 cup (125ml) grated cheddar cheese and a handful cherry tomatoes, halved.  Bake at 180C for 20-25minutes, until cheese is golden. Serve scattered with chopped parsley and milled pepper

TUNA FISHCAKES

2 cans shredded tuna, drained

1 large egg, beaten

4 medium spring onions, finely chopped

60ml red pepper, finely chopped

2 Tbsp Wholewheat couscous or wholewheat breadcrumbs

3 Tbsp self-raising flour, for dusting

Non-stick olive oil cooking spray for frying

 

Place first five ingredients in a bowl and mix well.

Shape mixture into 8-12 fishcakes and place in fridge for 15min to firm

Dust fishcakes with flour

Fry until golden all over

Drain on kitchen paper and serve.

30ml Olie

1 klein ui, fyn gekap

220g Pynappelringe in stukkies gesny, hou die sap

1 rooi rissie, fyn gekap

15ml mielieblom

30ml wit asyn

10ml Tamatiesous

10ml Sojasous

250ml Water

30ml Suiker

 

Soter uie in olie tot sag.  Voeg pynappel, rooi rissie en pietersielie by en soteer liggies.  Voeg mielieblom, asyn, tamatiesous, water, pynappelsap en suiker by.

500g noodles

1kg Maalvleis

1 pakkie bacon, gesnipper

1 pak kaas en uie chips, maak fyn

2 medium uie, gekap

1 blik suikermielies

1 pakkie bruin uiesop

 

Braai maalvleis, bacon en uie saam.  Voeg mielies en noodles asook soppoeier by.  Gooi kaas en uie chips bo-oor.  Bak vir 20min op 180C. (Strooi sommer kaas ook bo-oor)

1 groot hoender (of ‘n pak met 4 dye en 4 boudjies)

Sout en Peper na smaak

1 pak bruin uiesop

250ml Kookwater

250ml Blatjang

250ml Mayonnaise

 

Geur die hoender met sout en peper.  Plaas die hoender in ‘n oondbak.  Meng die res van die bestandele en gooi oor die hoender. Bak in die oond toegemaak vir 30min op 180C.

Verwyder die deksel van die bak en bak verder tot gaar.
